I Can’t Believe this is a Gluten-Free Cake!

In the past years, we are seeing more parents coming to us with such special gluten-free requests due to their children’s allergy to gluten, the protein in wheat and some other grains.

We had started experimenting with gluten-free recipes a few years ago but never had great breakthroughs in terms of the cake texture, at least not to my satisfaction. This summer we set off to develop a new range of recipes with HUGE success from over 10 tasting sessions, ranging from clients and friends where some are gluten-intolerant and some not. It is extremely exciting as we received highly positive responses from over 50 tasters. It tasted so good most that those who are gluten-intolerant could not believe they are gluten-free, giving us the thumbs-up and those who aren’t, could not tell the difference from the regular cakes!!!

What makes this range so special is that in addition to using gluten-free flour, we bake with organic virgin cold-pressed coconut oil (VCO) and coconut sugar.   Why is this good news? 1.
